Homemade Chicken Kiev Recipe

A lot of you have been emailing me asking for healthy meal ideas and how I take 'normal' foods and make them a little healthier. So, today I'm showing you how I make one of my favourites, homemade chicken kievs. This recipe contains 4 of your 5 a day.

Ingredients:
Chicken breast
Garlic and herb Phillidelphia light
Potatoes
Olive Oil spread
Runner beans
Broccoli
Vegetable Nuggets
Olive oil

Method: 
1. Slice the chicken breast like you would a bread roll but don't go all the way through, leave enough uncut so the filling doesn't escape. Take a knob of the garlic and herb phillidelphia light and put it inside the uncooked chicken breast. Secure with a toothpick.
2. Place the chicken in the oven with a little covering of olive oil to crisp it and cook for 25 minutes or until evenly browned.
3. Add the vegetable nuggets to the oven for the amount of time indicated on the packaging.
4. Whilst these are cooking boil the broccoli, runner beans and potatoes.
5. After the potatoes are fully boiled add a little olive oil spread and mash them.
6. Remove chicken and vegetable nuggets from oven and serve with the mashed potato, broccoli and runner beans.

What I'm eating

So, I've had a few questions lately about what I am eating at the moment and how I am losing weight. So this post will show you what I'm currently eating and there will be a seperate post on my current workout routine. 

Let's get one thing clear, I am not eating clean. I would really love to as it's so good  for you, and if you do then well done. But it's just not for me. I love eating sweets, bread, pasta, chocolate and crisps, but all in moderation. If I'm craving something, for example chocolate, I will try to eat a healthier alternative such as the Kallo Cholocate thins. But I will indulge myself sometimes; last week I went out for a meal with my fiance to Frankie and Bennys, and treated myself to Spagetti Carbonara. It's good to treat yourself once in a while otherwise you get bored and you'll crave bad foods and then binge, that's how it works for me anyway.

This is my usual trolley load on a sunday.
So a typical day for me is a work day, I work full time and I try to meal prep on a sunday so I eat healthily. I do fail at meal prepping sometimes and then I end up eating a baggette, but for me personally, eating only a baggette is better than what I used to eat; which included a can of coke, bagette, packet of crisps and a chocolate bar, I'm getting there.

Instead of telling you what I ate all day I'm going to show you.







Breakfast- Banana on wholemeal toast
Snack- Portion of grapes
Lunch- Chicken and Bacon pasta Salad
Snack- Kallo Salt and Vinegar corn and rice snacks
Dinner- Homemade chicken kievs, mashed potato, broccoli, runner beans and vegetable nuggets

I only drink water really unless I want something different then I will drink diet coke (once a month at most) vitamin water, squash or fruit juice.

Easy Mini Crustless Quiches

My first recipe is going to be an easy one, to ease you into my recipes. These can be eaten as snacks or part of a main meal, a good source of protein and very yummy.

Ingredients: 
50g grated cheese
6 eggs
100g quark
Your choice of filling 
Olive Oil/ Fry Light

Method: 
1. Mix together the eggs, quark and half the cheese in a jug (easier to pour the mixture) until they are all blended together
2. Pour a little olive oil into each hole of the 12 hole cupcake tin. I like to use fry light as it's in a spray bottle
3. Evenly pour the quiche mixture into the cupcake tin until you have used up all of the mixture
4. Add your choice of filling to each of the 12 mixtures, I like to use bacon, and the rest of the cheese and cook in the oven for 20 minutes or until golden brown

I love this recipe and although I cannot take the credit, as I found this online when I tried out slimming world, I thought it would be nice to share with you as it's easy and super quick. Let me know if you try them and if you would like to see a specific recipe. Thanks for reading.

How do you style your hair at the gym?

Today I want to ask you a question; how do you style your hair in the gym? Personslly I wear my hair high in either a high ponytail or bun, with the occasional french plait through my fringe. But, I see these girls with very long surgically straightened hair wearing their hair lose and flowing down their back. Now if that was me I would be continuously sitting on my hair and it would be stuck to my back with sweat by the end of my session. Seriously though, how can people get away with it?

Snacks are good!

If you are anything like me you will need a little pick me up snack inbetween meals, one which won't make your blood sugar go through the roof then crash in an hour. My secret to snacking is to keep it under 100 calories, and obviously as clean and healthy as possible. We have all been told from a young age never to eat inbetween meals, but snacking can actually raise your metabolism and help you to lose weight. Plus, if your satisfying your hunger your less likely to indulge in something you shouldn't whilst waiting for your food to cook.  



Here are a few of my favourite snacks, all under 100 calories and fairly healthy. You should try to stick to fruit if possible to try and achieve your 5 a day. As I work full time and lead quite a busy lifestyle I need snacks that I can just grab and go, no time consuming snacks that need to be prepared first hand. 

Snack a Jacks come in a variety of different flavours and sizes and are great to snack on, from savoury to sweet you are bound to find a flavour you like. 
Hartleys Sugar Free Strawberry Jelly is one of my favourites, feels like such an indulgent snack but only contains a mere 10 calories and no added sugar.
Kallo Chocolate thins taste amazing, if your craving chocolate then these would be perfect for you, plus you can have two. These come in milk and dark chocolate. 
Tesco Popcorn, these come in a variety multipack with the flavours sweet, salted and sweet and salty, they are all under 100 calories. 
Thai Chilli rice crackers, I picked these up from holland and barret, although they are quite high in calories, if you have 20g of these you will be under 100 calories. Yummy!
